Zakah on items on which the prices fluctuate

If a person is running a business and the selling price of his merchandise always fluctuates, how should he calculate his zakah?

When zakah on merchandise is calculated, the selling price of all the merchandise should be added together. Thereafter, 2.5% of the sum should be given in zakah. However, if it is unknown what the selling price will be due to fluctuation, the average selling price should be determined by previous sales and the zakah should be calculated accordingly.
